Our practices

We practice sustainable viticulture while rigorously respecting Champagne traditions both in the vineyard and in the cellar.

In the vineyard

We work on around twenty plots spread over 13 localities, with an average age of around thirty years, mainly facing north and east.

Our grape varieties are composed of:

. Pinot noir in the majority, the fine pinot par excellence, which has found a land of predilection in Côte des Bar

. Chardonnay, a great white grape variety, maintaining a special symbiosis with the Kimmeridgean soils

. Pinot blanc, a variation of pinot noir, is a rare and prized grape variety in Champagne.


Our estate is HVE3 certified, attesting to environmentally friendly cultivation methods and strict traceability.

In the cellar

In Champagne a gentle but rapid grapes press is key to ensuring a fine wine.

Following the press, the musts will be isolated by grape variety and press quality (1st press / 2nd press), the best plots will be micro-vinified.

The majority of the musts will be vinified in stainless steel vats, a container which preserves freshness and conserves fruitiness while protecting against oxidation.

A confidential part will be vinified in barrels (from Burgundy and Champagne), this vinification is reserved for the most promising grapes, which will then undergo extensive ageing in bottles to become rich and complex champagnes, with a complete aromatic palette.

Champagnisation & maturing

Our bottling dates are carefully chosen to allow time for our clear wines to express their aromas.

According to their profile:

1/ Part of the cellar is selected to make so-called "blended" champagnes (Reserve, etc.)

2/ Part will be bottled without blending (champagnes from a single harvest year, etc.)

3/ Part will join our reserve wines for future blends.

After bottling, our champagnes are stored in the cellar, protected from temperature variations, where they will undergo their champagnisation.

In order to allow each of our vintages the ability to express its potential, we age our champagnes in bottles for between 2 and 10 years.
